One day a little over a year ago, I just woke up and realized I didn’t want to feel or look as bad as I did anymore… or ever again. So I changed. I started watching what I was eating, studying better nutrition and working out. This led me to where I am now, a member at South Hall CrossFit and supplementing my nutrition and WODs with AdvoCare. I lost 60 pounds, went from a women’s size 14 to a juniors size 5. Now I’m in the process of building more muscle.

Hold your wings

I honestly don’t remember where I first saw this idea to give credit. It’s certainly not my own, but good to share. I’m out eating lunch with the babies and got a strange look because I’m reminding them to “hold their wings”. Hate when there’s a mess with a juice box and they launch juice out of the straw by squeezing too hard? Maybe that’s just my OCD kicking in. But fold out the top two flaps on the side. Teach them to hold the wings. No mess 🙂

The 3 ingredient, 3 minute protein muffin

Wanna know what I eat almost every morning now? Of course you do. It’s super easy and fast. Has to be, I’m a woman constantly on the run. So pretty much I wake up, immediately mix up my Spark (don’t talk to me before I’ve had it either. Not pretty.) then start this breakfast before I wake up my girls:
ingredients
1 banana
1 egg
1scoop of protein shake powder (I have vanilla flavor but any brand/flavor will work
*makes one serving*

directions
1) spray the inside of a measuring cup with cooking spray
2) mash the banana (I put mine in a drink blender)
3) combine all ingredients in the measuring cup and pop it in the microwave for 3 minutes.
Done! Now you have a nice warm protein muffin. Sometimes I mix some cinnamon and vanilla into the batter before cooking, sometimes I cut it in half and top with raw almond butter. This is another one you can cook however you want and it’ll still be delicious 🙂

*update* there’s a few other recipes I make that include the same ingredients. But I can’t spoil them all in one post. Keep this one handy 🙂

Making baby, preschooler and mommy colds go away

So of course as soon as I publish a health-related blog, we all wind up with the sniffles. Thanks for that, karma. During the day it’s bearable and all of us have been as active as usual. But last night about did it for me. Poor Emma couldn’t breathe out of her nose, and Clara couldn’t settle from coughing so much. I had a choice there. Though I HATE the smell of Vicks Baby Vapo-Rub, this is what I did for them (and myself) ….and it worked!
I grabbed a pair of socks for all three of us. I woke Emma and Clara, took their feet out of their footie jammies and slathered that Vicks all over the bottom of their feet, then put their socks on and put their jammies back on. Emma replied with: “thanks mommy, my nose isn’t broken anymore”. She was right. My nose instantly cleared up when I put mine on. No cough/cold medicine for us!
For daytime, I’ve made sure they’re getting their vitamins, drinking plenty and I gave them oranges too 🙂 Vitamin C boost!

Breakfast quinoa bowl

So, here’s what I made for breakfast today. I usually create my meals mostly following paleo, but quinoa is so good that I sneak it in every now and then 🙂 I usually make a different quick cook recipe that I’ll post later, but today I wanted something different. So here it is:

Ingredients
1/4 cup dry quinoa
1/2 cup water
Tip of a teaspoon full of diced garlic
2 eggs
1 slice turkey bacon
1 teaspoon olive oil
Seasoning as desired (I used a mix with pepper, paprika, sea salt and garlic)
Whatever fresh veggies you have! (I used green bell pepper, mushrooms and cherry tomatoes)
*makes one serving*

Directions
1) set out one small pot, one frying pan and a small bowl to scramble the eggs. Rinse your quinoa (I put mine in a coffee filter and held it under running water in the sink) and set it down in the sink to drain.
2) put quinoa in the pot (don’t add the water yet!) and warm for 2 minutes on medium heat. After those two minutes, add the 1/2 cup water and diced garlic. Bring to a boil over medium-high, stir once then reduce heat. Cover and simmer for 15 minutes.
3) meanwhile, cook turkey bacon in the frying pan, turning often. When the bacon is finished (about 7 minutes) set bacon aside on paper towel
4) add olive oil and vegetables. Sauté and season as desired. Remove from pan and set aside.
5) crack eggs into bowl, scramble and pour into the frying pan. Cook and season as desired.
6) crumble bacon, combine all ingredients and add salt and pepper as desired!

You know what I like about this? It was easy. And I can change it up easily and make it however I want 🙂 this suited for my brunch just fine, since we woke up later today and at the end there was a lot more food than I thought!
